Brats, Saurkraut - It Must Be Octoberfest!

“Food is almost as important to a traditional Octoberfest as the chicken dance,” says Joan McFadden of Sundown Catering. Learn how to prepare and host an authentic Octoberfest at the Redmond Public Library on Wednesday, October 3, and on Wednesday, October 10 at the Bend Public Library. Both programs start at 6:30 p.m. Participants must register in advance. The Redmond program is limited to 20 and the Bend program is limited to 30 participants.

McFadden didn’t set out to be a caterer. During the 1990’s she was working for her family business and struck up a conversation with a client. That client happened to be in the catering business. Not long after expressing her interest in learning the trade, she was working for the client and learning that being a caterer wasn’t only about being a good cook, but about being an excellent organizer. She opened Sundown Catering, Lcc, when she and her husband moved to Central Oregon in 1999. Since then she has helped clients create memorable occasions and events.

During the presentation McFadden discuss traditional German foods. “Salt, black pepper, thyme, caraway, parsley, chives and laurel are most common spices used in German foods.” McFadden will demonstrate how to prepare hand made German brats (from Redmond Smokehouse), hot German potato salad and sauerkraut Provencal. Participants will sample the food and take home recipes and tips.
