Learn what you need for a creative outdoor dining experience on Wednesday June 4th at 6:00 p.m. at the Redmond Public Library when Joan McFadden presents “The Perfect Picnic.”

“Don’t we all remember the buckets of chicken, the containers of potato salad and coleslaw?” says McFadden, owner of Sundown Catering. Picnicking has evolved since then and now according to McFadden those who love to eat outdoors don’t have to be satisfied with soggy salad and greasy chicken.

“I think Oregonians, whether native or transplanted, hunger for outdoor activity, and when the sun shines, we pack our picnic baskets,” says McFadden who moved to Central Oregon four years ago and started Sundown Catering. “A picnic is an occasion that fulfills so many needs. Being outside, being with family and friends, eating fun food.” McFadden even contends that the bugs, wind and sand are minor inconveniences when compared to the fun of a picnic with friends or the romance of a dinner for two under the stars.

McFadden will share recipes for an Antipasto Supper Sandwich, which is “smashed together,” and then grilled, a tortilla casserole made in a terra cotta saucer and a simple corn and bean salad.
