Deschutes Public Library is pleased to host Chef Rose of 12’Oclock Tart for a cooking demonstration on December 9 at 6:00 pm at the Bend Public Library. The program is free and open to the public but class size is limited to 30 participants. Registration can be done online at www.dpls.us/calendar or by calling 312-1032.
Chef Rose Makena knew at a very early age that cooking was her passion. Her culinary education has taken her from the Western Culinary Institute-Les Cordon Bleu program in Portland, Oregon, where she graduated in the top 5% of her class, to the exclusive restaurants of Los Angles. Makena has also spent time in France, further refining her skills a both a sous and pastry chef
“Cocktail food is unique,” says Chef Rose, “because it is usually items that can be eaten standing up, usually in one or two bites.” She says that because they are individual items they need to be really attractive and have a high flavor profile. “One bite must entertain all the taste buds.” She likes there to be multiple flavors in each bite, salty, creamy, and sweet, for example. Chef rose says the biggest mistake that people make when planning a cocktail party is that they don’t create a balanced menu and they usually over do it. “The best way to make it seem effortless is to chose a menu that has a balance of things you can completely prepare the day before, a few things you prepare the day of and only 1 item that might need attention during the party.” She says that “serving a few really amazing dishes is more memorable than 15 mediocre items, or a menu that has left the hostess frazzled and running around at her own party.”
During her presentation Chef Rose will demonstrate the preparation of some of her favorite cocktail party foods, including caramelized onion tartlets with goat cheese, thyme and shaved prosciutto, Belgium endive spears with ripe pear, Oregon Blue cheese, candied pecans and fresh chives, and warm poached shrimp with mango-cilantro salsa.
